Thank you so much to Kat for writing while I was getting my life settled in my new apartment! It's taken about 10 days but I'm finally starting to feel at home, Eloise is literally sniffing her way around the house, and I now finally have an internet connection! Hallelujah! :)
The move was difficult, mainly because I was away working on two operas during the 3 weeks leading up to it. I was out of town, which gave me a couple really stressful days to pack everything up right before the actual moving day. And, I only had the moving day off, so I was working the whole time!I hired a great moving company, and despite showing up 3 hours late, they did a wonderful job and were very friendly. Despite absolutely loving my new neighborhood and apartment, I always have a hard time leaving somewhere that I've lived. Remember how cute my old place was? Well, it was hard to see it all change that day!After moving in, I was completely exhausted and frustrated to learn that I couldn't even take a hot bath! It took 5 days to finally get hot water in my new apartment, but when I did I was sooooo happy!
I was pooped from all the unpacking and lack of a nice shower that each evening I had nothing left in me to cook. For the first few nights I'm the first to admit I splurged on the Whole Foods Salad Bar. I think it's really funny to see what I chose each night, too. At first I was really stressed out and grumpy, and my food selections reflect that (fried food, cream sauces...) but as the week went by (and the hot water got turned on!) I chilled out and craved healthier foods (kale, whole grains, etc).
First night: Seafood Salad with mayo + Mac n Cheese + Fried Popcorn Shrimp + Beets +Veggie Quinoa- this "salad" was so huge that I had leftovers for lunch the next day!Second Night: Broccoli + Sesame Tofu + Eggplant Parmesan + BeetsThird Night: Kale + Beets + Wheatberries+ Okra+ Ed's Tantalizing TofuVisiting Whole Foods was also kind of fun each night because of the natural drama going on outside! There was also a crowd of people watching a nest of newborn red-tailed hawks learning to fly off the office building across the street! There are even videos on youtube about these guys! :) I also had some yummy snacks upon moving in. Mainly pita chips with hummus and cheese crackers. Can i tell you how amazing these pita chips are?? I love Whole Foods 365 brand products, and I'm telling you these are the yummiest pita chips EVER! 365 Whole Wheat Pita Chips with Flax Seeds and Onion! YUM!!!!!!!!!! And alongside a huge tub of creamy hummus for $3.99- you can't beat it! Whole Foods can be really expensive, but sometimes you stumble across some great deals, you really do! :)The cheese and crackers were also pretty great- Z crackers with some creamy herby cheese. Breakfasts have been pretty much the same- coconut yogurt with some sort of fruit or granola. I am REALLY in love with the So Delicious coconut yogurt, but I was bummed to read in VegNews this week that of all the non-dairy yogurts, coconut yogurt has the least amount of calcium. :( Oh well, at least I eat tons and tons of kale to make up for it! My staple is the larger tub of plain yo, but I splurged on a little baby pina colada yo right after I moved in! DELISH with some chocolate granola! :) To save a little this week, I bought my granola from the bulk bins at WF, and I am really liking the Classic Granola, which was only $3.23 a pound! Oh, and yay for strawberry season!Stay tuned for pics of the new place and my first meal in the new kitchen!
