Trout!

The other day I was on the phone with a good friend while he was vacationing with his family at the Grand Canyon. Our conversation led to fishing and cooking, and he told me about the amazing rainbow trout he would catch whenever he was in Utah. It reminded me how much I love fish, and made me wonder why I so rarely cook it! It's hard to mess up, takes seconds to cook, and you can get it for a lot less money than you'd think.

I headed over to Whole Foods, just praying that something would be on sale. As a rule, I try never to eat farmed fish, and WF was my best bet, although I look forward to trying out my neighborhood fishmonger, Frankie's Catch of the Day in Belmont Center, as well. What do you know, they had trout on sale!! I got 2 filets for under $4!! Yes, from Whole Foods. I know some stuff there is outrageously expensive... but I think you just have to know what to get and look out for bargains. Bulk bins and specials, my friends! :)

Got the trout home and wanted to go simple with it. Just a hot pan, butter (ok... Earth Balance), and oregano. YUM!! Served it with yellow squash that I threw into the pan after the fish was done and added more "butter". I always seem to forget about butter, actually. Nom, nom, nom, nom!!

Doing a lot of practicing lately, and getting my apartment ready for my roommate to move in. She's one of my oldest friends- in fact, she knew me before I was born, even though she was just a baby, too! Our Dads have been buddies since they were in elementary school.

I've also been finally getting around to putting some posters in frames. Another girlfriend gave me a gorgeous print of Fragonard's The Swing. I can't wait to visit her in Paris in September!!!

I'm so excited to finally have a roommate, and she's bringing two feline friends for Eloise- Skittle and Reese. Hopefully the girls will get along. Eloise will have to show them the ropes- like how much fun the bathroom is! :)
